Air Fryer Mediterranean Panzanella

  • 1 loaf of Villaggio® Italian Style Thick Slice 100% Whole Wheat Bread
  • 1 cup (250ml) Olive Oil, divided
  • 1/2 cup (125ml) Red Wine Vinegar
  • 2 cloves of Garlic, crushed
  • 1 Cucumber, cubed
  • 1/2 cup (125g) Olives
  • 1 cup (250g) Grape Tomatoes
  • 1 Red Onion, thinly sliced
  • 1 cup (250g) fresh Basil
  • 1 green Zucchini
  • 1 yellow Zucchini
  • 1 cup (250g) Buffalo Mozzarella Cheese, torn or cut into bite-sized pieces


  1. Preheat air fryer to 400°F (205°C)
  2. Tear 1 loaf of bread into large chunks and toss, in a large mixing bowl with 2 tablespoons (30ml) of Olive Oil
  3. Air Fry at 400°F (205°C) for 4-6 minutes, until golden brown and toasty
  4. In a large mixing bowl, whisk Olive Oil and Red Wine Vinegar together, then add in Garlic, Cucumbers, Olives, Grape Tomatoes, Red Onions, Basil, Zucchini and Buffalo Mozzarella Cheese
  5. Toss in toasty bread cubes and season to taste with Salt & Pepper
