Cut the bagels in half and evenly spread the cut sides with mayonnaise.
Layer the tops of the bagels with 2 slices of cheddar cheese, onion, apple, arugula, pear, and fig jam.
Top with the second bagel half, cut side up.
Gently press down with a spatula.
Heat up the olive oil in a large ovenproof skillet over medium heat and cook the bagels for about 5 minutes, press down with a spatula, then gently flip the sandwich over, and transfer to the oven to crisp up and completely melt the cheese.
