Bacon Butternut Squash Grilled Cheese Sandwich

  • 4 slices of Villaggio® Classico Italian Style Thick Slice White Bread
  • 6 slices Thick Cut Bacon
  • 1/2 medium Butternut Squash
  • 1 tbsp (30g) Butter
  • 1 tbsp (30mL) Olive Oil
  • 1 Clove of Garlic, minced
  • 4 slices Gouda Cheese
  • 1 cup (250g) Baby Kale

Dijon Aioli:

  • 1/2 Cup (125 ml) Mayonnaise
  • 1 tbsp (30 ml) Dijon Mustard
  • 1 1/2 tsp (6 ml) Lemon Juice
  • 1 Clove of Garlic, grated
  • Pinch of Salt
  • 1/4 cup (65g) Sunflower Seeds, toasted
  • Salt & Pepper, to taste


  1. Preheat over to 350° (176°C)
  2. Over medium-high heat, panfry Bacon, until crispy, reserving the bacon fat in the pan
  3. Drain bacon on a paper towel to remove excess grease
  4. Slice butternut squash with skin on, then, over medium-high heat, brown in the bacon pan, for about 15-20 minutes, until golden brown and cooked
  5. Give the pan a quick wipe, then, melt the Butter, add in Olive Oil and Garlic and cook over medium heat for about 5 minutes
  6. Top 2 of the slices of bread with 2 slices of gouda, 3 slices of bacon, evenly divided cooked squash slices, 1/2 cup of baby kale, and a sprinkle of toasted sunflower seeds
  7. Spread the remaining 2 slices with the Dijon aioli
  8. Place onto the pan Aioli side down and grill for about 5-10 minutes
  9. Turn and place into a preheated oven for 15 minutes
