Bacon Maple French Toast Bake

Ingredients
- 1 loaf of Villaggio Artesano® Original White Bread
- 8 – 12 slices high-quality thick cut Bacon
- Butter, for baking dish
- 3 1/3 cup (800ml) Half-and-Half
- 3 1/3 cup (800ml) Milk
- 1 tsp (5ml) Vanilla
- 5 large Eggs, whisked
- 1 cup (250g) Brown Sugar
- 1/4 tsp (1.25g) Salt
- 1/2 tsp (2.5g) Cayenne Pepper
- 1/2 cup (125ml) Butter, melted
- 1 1/2 cups (375ml) Maple Syrup
Directions
- Preheat oven to 350°F (180°C)
- Heat up a large non-stick skillet over medium-high heat and (partially) cook the bacon for about 2-3 minutes in one layer and set aside
- Butter a 13 x 9-inch oven-proof baking dish or large roasting pan
- Arrange slices of bread in one layer
- Whisk eggs together with brown sugar, salt and cayenne pepper and set aside
- In a large saucepan, over medium heat, combine the milk, cream and vanilla and bring to a boil then, slowly add/whisk in the egg mixture gradually and keep whisking until fully combined
- Pour in melted butter to incorporate
- Pour mixture through a sieve over the bread slices
- Bread will float on top, so gently press down on the slices to make sure they are covered and fully absorb the mixture
- Slice the par-cooked bacon in half and layer slices of bread
- Bake at 350°F (180°C) for 15 minutes, and then using a large spoon gently press down bread slices, and continue to bake for approximately 15 minutes, ensuring that it does not overcook as it will continue to cook while resting
- Remove from oven and serve hot to maple syrup
