Breakfast Chopped Sandwich

Ingredients
- 2 slices of Dempster’s® 100% Whole Grains Double Flax Bread
- 1 egg, hard-boiled
- 1/4 (30g) medium avocado
- 1/4 (20g) red bell pepper
- 1 (8g) kale leaf
- 1 tbsp (15g) beet hummus, or any hummus you’d like
- 1 tsp (5ml) hot sauce (optional)
- Salt and pepper, to taste
Directions
- Toast your bread slices in the toaster.
- On a cutting board, place the egg, avocado, bell pepper, and kale and sprinkle with salt and pepper.
- Chop until all ingredients are the same size and blended.
- Spread hummus on one slice, place chopped ingredients on top.
- Drizzle hot sauce if desired, close the sandwich with the other piece of bread.
Tip: Add 1/4 cup of cooked turkey breast for extra protein.
