Breakfast Grilled Cheese Sandwich

Ingredients
- 4 slices of Villaggio® Sesame Italian Style Thick Slice White Bread
- 4 tbsp (60g) Mayonnaise
- 2 tbsp (30g) Butter
- 6 large Eggs
- 6 thick-cut Bacon slices
- 4 slices of Swiss Cheese
- 4 slices of Mozzarella
- 1/4 cup (60g) Sundried Tomatoes
- 2 tbsp (30g) Chives, chopped
Directions
- Preheat oven to 350°F (180°C)
- Starting with a cold large non-stick frypan, lay the bacon out in a single layer
- Cook over medium heat, for 4-5 minutes per side
- Press frequently with a spatula to cook evenly
- Remove to a paper towel-lined plate to absorb excess grease and set aside
- In a mixing bowl, whisk together Eggs and season with Salt & Pepper to taste
- Evenly divide and spread 4 slices of bread with Mayonnaise.
- Over medium-high heat, melt the Butter in a non-stick fry pan and pour the eggs into a hot pan and agitate until the eggs are set and slightly browned on one side, then fold over, divide and transfer to each of the two prepared bread slices
- Layer on Bacon, Cheese, Sundried Tomatoes, and Chives and top with the remaining slice of bread
- Transfer to a baking sheet or directly on the baking racks, and toast the entire sandwich for about 3-5 minutes. until it begins to look golden brown and the cheese has melted.
- Keep an eye on sandwiches to make sure it doesn’t burn in the oven and adjust cooking time accordingly
- Serve with a fresh light Fruit Salad or Slices of Fresh Citrus
