Broccoli Rabe & Mozzarella Grilled Cheese Sandwich

Ingredients

  • 4 slices of Villaggio® Sesame Italian Style Thick Slice White Bread
  • 1 tbsp (15ml) Olive Oil
  • 1 clove of Garlic, minced
  • 1 tsp (5g) Red Pepper Chili Flakes
  • Bunch (30oz/850g) of Broccoli Rabe
  • 4 slices Mozzarella
  • 1 Lemon wedge
  • 1 tsp (5ml) Lemon Zest
  • 2 tbsp (30g) Mayonnaise
  • 3 tbsp (45g) Pine Nuts, toasted
  • 2 tbsp (30g) Butter

Directions

  1. Parboil the broccoli rabe, by bringing a large pot of water to a boil over high heat, then add in Broccoli Rabe and return water to a full boil for about 1 minute and plunge into a bowl of ice water for 2 minutes
  2. Drain well and transfer to a bowl
  3. Heat up olive oil, in a large oven-proof skillet over medium heat, add in garlic and sauté for 2-3 minutes until golden brown, then, add red pepper flakes and toast for about 30 seconds
  4. Add in broccoli rabe, toss well, then cook over medium-high heat for about 10 minutes, until tender and give a quick squeeze of lemon to finish
  5. Layer 2 slices of bread with mozzarella, then evenly divide and top with broccoli rabe
  6. Sprinkle with toasted pine nuts
  7. In a small mixing bowl, quickly whisk together mayonnaise and lemon juice, then, evenly divide and spread onto the remaining 2 slices of bread and place on top to complete the sandwich build
  8. Melt the butter over medium-low heat, then, add in the sandwich, to cook for approximately 5 minutes per side to allow the bread to toast slowly and the cheese to melt
