Chicken Alfredo

Ingredients

  • 1 package of Villaggio® Toscana Extra Soft Sausage Buns
  • 3 large Chicken Breasts, flattened
  • 3 cloves of Garlic, minced
  • 1 tbsp (15g) Oregano
  • 2 tbsp (30g) Parsley
  • 2 tbsp (30ml) Olive Oil
  • 2 tbsp (30g) Butter
  • 4 cups (1kg) Baby Spinach
  • 1 cup (250ml) Cream
  • 1/2 cup (125g) Parmesan, grated
  • 13 oz (360g) Provolone Cheese, grated

Directions

  1. Place each chicken breast between 2 sheets of parchment or plastic wrap and pound out to 1/4 Inch (6mm) then, sprinkle with salt & pepper
  2. In a small bowl, combine the garlic, oregano, parsley and olive oil, then coat the chicken breasts on both sides with the mixture
  3. Heat up a grill pan, over high heat, then, grill the chicken for approximately 6-8 minutes per side until cooked through
  4. Allow it to rest while preparing spinach and Alfredo sauce
  5. Heat pan over medium heat, and, add butter to melt, add spinach and sauté until wilted
  6. In a saucepan, over medium-low heat, add the cream, and bring to a simmer. Allow to simmer to 2 minutes, then, stirring constantly, add in the parmesan and provolone and whisk until the cheese has melted
  7. Slice chicken and pile into buns and layer with spinach and drizzle with a generous amount of the Alfredo sauce
