Chicken Pesto Sandwich

Ingredients

  • 4 slices Villaggio® Rustico™ Harvest Multigrain
  • 1 tbsp (15ml) olive oil
  • 1 (175g) chicken breast
  • Salt and pepper
  • 2 tbsp (60ml) pesto, store-bought
  • 4 (80g) roasted red pepper
  • 4 slices (85g) provolone
  • 1 cup (20g) arugula

Directions

  1. Pat the chicken breast dry, drizzle with olive oil, and add salt and pepper.
  2. Grill for approx. 7 mins. Per side until cooked through. Let rest for 5 mins then slice into 6 pieces.
  3. Spread pesto on a slice of bread, and top with 3 slices of chicken, roasted red pepper, provolone and 1/2 cup of arugula.
  4. Close the sandwich with a second piece of bread, repeat with the second sandwich and enjoy!
