Chicken Sandwich with Mango Chutney

Sliced Bread



  • 4 slices of Villaggio Artesano® Original White Bread
  • 1 lb (500g) Chicken Breast, grilled (approx. 2 small pieces)
  • 1 tbsp (15g) Curry Mayonnaise
  • 1 ripe Mango, peeled, pitted and thinly sliced
  • 1 Avocado, peeled, pitted and thinly sliced
  • 1/2 Red Onion, sliced thin
  • A couple of squeezes of fresh Lime Juice, to taste
  • 1 cup (250g) Baby Spinach

Curry Mayonnaise:

  • 2 tbsp (30g) Mayonnaise
  • 1/4 tsp (1.25g) Curry Powder
  • 1/4 tsp (1.25ml) fresh Lemon juice
  • Dash of Himalayan Pink Salt


  1. Pound chicken breasts to 1/2” thickness, brush with olive oil and grill over medium-high heat for 5-6 minutes per side, until no pink remains, then, allow to cool before shredding
  2. Stir all of the ingredients together for curry mayonnaise then evenly divide and spread over the bread
  3. Layer 2 slices of bread with chicken, mango, avocado, red onion, a quick squeeze of fresh lime, and top with baby spinach and the remaining slice of bread
