Chickpea Salad Sandwich

  • 8 slices of Dempster’s® 100% Whole Grains Ancient Grains Bread
  • 1 can (19oz) chickpeas, rinsed, drained, and divided
  • 1/2 cup (130g) Greek yogurt
  • 1/2 (65g) ripened avocado
  • 1 tbsp (7ml) lemon juice
  • 1/2 tsp (1g) cumin
  • Salt and pepper, to taste
  • 1/4 cup (7g) fresh herbs, your choice
  • 1/4 cup (40g) celery, chopped
  • 2 tbsp (25g) dill pickles, chopped
  • 2 (250g) tomatoes, sliced
  • 1/4 (50g) red onion, sliced
  • 4 pieces (10g) green leaf lettuce, washed and dried


  1. In a food processor, combine 1/2 the chickpeas, Greek yogurt, avocado, lemon juice, spices and herbs. Pulse 10 times until coarsely chopped.
  2. In a large bowl, combine the chopped mixture, the remaining chickpeas, the celery, and pickles.
  3. Toast your bread slices in the toaster.
  4. Build your sandwiches by layering 1 piece of green lettuce, the chickpea salad, sliced tomatoes and onions. Close up the sandwiches with the other piece of bread and enjoy!
