Chickpea, Tofu Salad served with Toasted Crostini

  • 4 Villaggio® Sesame Bread slices
  • 1 cup (250ml) firm Tofu, in cubes
  • 4 tbsp (60ml) Canola oil
  • 1 Garlic Clove, chopped
  • 1 tsp (5ml) Sweet Paprika
  • 1 tbsp (15ml) Sugar
  • 4 tbsp (60ml) Sesame oil
  • 2 tbsp (30ml) Honey
  • 2 cups (500ml) Chickpeas, drained and rinsed
  • 1 Red Pepper, diced
  • 1 Cucumber, diced
  • 1 Red Onion, finely chopped
  • 2 tbsp (30ml) Mayonnaise
  • Salt and Pepper to taste


  1. In a bowl, mix together the tofu, garlic, paprika and sugar.
  2. Sauté the tofu in a little canola oil in a hot pan over medium heat for 5 minutes, stirring regularly.
  3. Adjust the seasoning.
  4. Meanwhile, mix together the sesame oil and honey in the bowl.
  5. Cut each slice of bread into 4 triangles, then brush them with the prepared mix.
  6. In a hot pan, brown the bread slices for 4 minutes on each side over medium heat.
  7. In a bowl, mix together the chickpeas, pepper, cucumber, onion, mayonnaise and tofu.
  8. Adjust the seasoning.
  9. Serve the prepared mix and sesame croutons in each salad bowl.
