Chorizo and Scrambled Eggs Sandwich

  • 4 Villaggio® Toscana™ Sausage Buns
  • 4 Eggs
  • 4 tbsp (60ml) 35% Cooking Cream
  • 2 Peaches, in slices
  • 2 cups (500ml) Mild Cooking Chorizo, in rounds
  • 1 ½ cups (375ml) Ricotta
  • 2 tbsp (30ml) Honey
  • 4 Spring Onions, cut into rounds
  • 4 tbsp (60ml) Olive oil
  • 2 tbsp (30ml) Butter
  • Salt and Pepper to taste


  1. In a hot pan, sauté the chorizo rounds in a little oil for 2–3 minutes until they start to colour. Remove and set aside.
  2. Whisk together the eggs, cream and salt and pepper.
  3. In the same pan, cook the eggs for 2 minutes, stirring frequently. Season, to taste.
  4. Lightly toast the buns, then butter.
  5. Mix together the ricotta, honey, salt and pepper.
  6. Spread the ricotta mix onto each bread slice, then place on the peach slices, eggs, chorizo rounds and spring onions.
