Cranberry Gouda Loaf

  • 1 loaf of Villaggio Artesano® Original White Bread
  • 3 tbsp (45ml) Olive Oil
  • 1 cup (250ml) Cranberry sauce
  • 1 cup (250g) frozen Cranberries
  • 1/2 cup (125g) dried Cranberries
  • 20 oz (550g) Brie, grated
  • 2 sticks Butter, melted
  • 1 clove of Garlic, minced
  • 1 tbsp (15g) dried Thyme
  • 1 tbsp (15g) dried Rosemary
  • 1/4 cup (62.5g) fresh Parsley, finely chopped
  • Sea Salt and Freshly Ground Black Pepper, to taste
  • Suggested garnish: chopped Chives


  1. Preheat oven to 375°F (190°C)
  2. Measure out aluminum foil to twice the length of 1 loaf of bread
  3. Brush aluminum foil with Olive Oil and transfer bread to the center
  4. In another small bowl, combine melted Butter with Garlic, Thyme, Rosemary, Parsley and Salt & Pepper to taste
  5. In a small bowl, mix the Cranberry Sauce together with Frozen Cranberries and Cried Cranberries
  6. Grate cold whole Brie Cheese, including rind, into another Bowl
  7. Working in sections of 4-5 slices at a time, layer with Melted Butter mixture, Cranberries and sprinkle with Grated Brie Cheese
  8. Repeat process until the loaf is completely coated and full of the ingredients
  9. Sprinkle any remaining cheese over the top
  10. Wrap the foil around entire loaf
  11. Bake at heated oven 375°F (190°C) for 20-30 minutes until bread is toasty, melty and your kitchen smells great
  12. Serve very hot and yummy
