Wrapped in a Dempster’s® 100% Whole Wheat Large Tortilla, the sandwich features a delicious blend of textures and tastes. Ingredients

  • 4 Dempster’s® 100% Whole Wheat Large Tortillas
  • 1/4 cup Extra Virgin Olive oil
  • 1 1/2 tsp curry powder
  • 2 cups, cauliflower florets, cut into bite-sized pieces
  • 1/2 cup Hummus
  • 1 cup Baby Spinach
  • 1/4 cup feta cheese
  • 1/4 cup finely chopped dried apricots (optional)

Directions

  1. Preheat oven to 400°F (204°C) degrees.
  2. In a small bowl mix the olive oil with the curry powder until blended.
  3. Set aside
  4. In a large mixing bowl toss the cauliflower florets with the curry oil until evenly coated.
  5. Spread on a baking sheet and roast for 15 minutes.
  6. Let stand at room temperature for 5 minutes.
  7. Lay a tortilla on a surface.
  8. Spread 2 tbsp hummus over the whole tortilla leaving a one-inch border.
  9. Place 1/4 cup of baby spinach along the bottom.
  10. Top with 1/4 of the roasted cauliflower, and 1 tbsp each of feta and apricots if desired.
  11. Fold in the sides and roll up.
  12. Repeat with remaining tortillas.
