Easy Rustic Italian Quesadillas

Easy Rustic Italian Quesadillas bring rich Italian flavours to your table any day of the week. A combination of creamy cheese and savoury prosciutto folded into delicious Dempster’s® Sundried Tomato 10” Tortillas makes these quick and easy quesadillas a lunch or dinnertime favourite. Serves two.

Ingredients

Hummus:

  • 8 slices Dempster's® White Bread
  • 2 cups (500 mL) chopped roasted sweet potato
  • 1 can (19 oz/540 mL) chickpeas, drained and rinsed
  • 3 tbsp (45 mL) tahini paste
  • 3 tbsp (45 mL) lemon juice
  • 2 tbsp (30 mL) olive oil
  • 1 small garlic clove, minced
  • 1/2 tsp (2 mL) ground cumin
  • 1/2 tsp (2 mL) each salt and pepper

Toasts:

  • 1/4 cup (60 mL) olive oil
  • 1/2 tsp (2 mL) garlic powder
  • 1/2 tsp (2 mL) paprika
  • 1/4 tsp (1 mL) each salt and pepper

Directions

  1. SPREAD pesto over one side of the tortillas.
  2. Top 1/2 of each tortilla with prosciutto, tomato, cheese, and arugula and fold the other half over the filling.
  3. BRUSH the outside of the filled tortillas with oil.
  4. Grill in a skillet or panini press over medium-high heat just until toasted and the cheese has melted, about 2 minutes per side.
  5. Cut into wedges to serve.
