Family Friendly Grilled Cheese & Tomato Soup “Lasagna”

What’s a more classic pairing than Grilled Cheese and Tomato Soup?
Sliced Bread


  • 18 Slices of Dempster’s® White Bread
  • 1 1/2 Sticks of Butter – Softened
  • 1 1/2 Cups Shredded Cheddar
  • 1 1/2 Cups Shredded Mozzarella
  • 1/2 Cup Shallots – Thinly Sliced
  • Salt & Pepper, to taste
  • 2 x 284 ml cans of Condensed Tomato Soup
  • 1 Cup Milk
  • 5 Large Eggs


  1. Preheat oven to 400°F (204°C)
  2. Butter both sides of bread slices, arrange on 2 baking sheets and bake at 400°F for about 7-8 minutes then, flip over and continue to bake for another 7-8 minutes until golden brown
  3. In a mixing bowl, gently combine Cheddar and Mozzarella together and set aside
  4. In a large bowl, whisk together Tomato Soup, Milk and Eggs until smooth
  5. In a 3 Quart Casserole Dish, layer 6 Slices of prepared bread evenly over the bottom, spread approx. 1 cup of cheese mixture, then, a third of the shallots, sprinkle with salt and pepper to taste and repeat with another layer of 6 slices of prepared bread, 1 cup of cheese mixture, a third of the Shallots and salt & pepper then, top with the last 6 pieces of prepared bread
  6. Top by pouring the tomato soup mixture evenly over top to cover and coat all of the bread
  7. Sprinkle with remaining cheese and shallots
  8. Bake in the oven for 35 minutes, until bubbly and crispy brown
  9. Remove from oven and allow to rest for 5 minutes before cutting into squares and serving
