Folded Breakfast Tortilla

Ingredients

  • 1 Dempster’s® Original Medium Tortilla
  • 2 Large Eggs, beaten
  • 2 tbsp Green Onions, diced
  • Salt and pepper, to taste
  • 1 tbsp Chili Oil
  • 2 tbsp Cheddar, grated
  • 1/4 cup Baby Spinach Leaves, chopped
  • 1/2 Tomato, sliced
  • 1/4 cup Red Onion, sliced
  • 1/4 cup Yellow Peppers, sliced

Directions

  1. In a small bowl, combine egg, green onions and salt and pepper
  2. In a small pan, the size of the tortilla, heat chili oil on medium-high. Pour egg mixture and cook until almost set, about 2 minutes
  3. Place the tortilla on top of the eggs, let it sit for 30 seconds and flip. Add cheese, cover, turn off the stove and let it rest for 2 minutes.
  4. Add spinach, sliced tomatoes, onion and peppers, fold and enjoy!
