Ingredients
- 4 slices of Villaggio Artesano® Sourdough Bread
- 1/2 cup (125g) Lemon Aioli
- 2 King Mushrooms, thinly sliced
- 1 Jalapeno Pepper, seeded and thinly sliced
- 1 cup (250g) Baby Spinach
- 1 Heirloom Tomato, sliced thin
- 1 Avocado, peeled, pitted and sliced thin
- 1 Summer Squash, thinly sliced
- 1/2 Red Onion, sliced thin
- 4 1/2 oz (125g) Cucumber Ribbons
- 4 slices Swiss Cheese
- 4 slices Provolone
- 2 slices Cheddar
- 2 Scallions, finely sliced and placed in cold water
- 4 1/2 oz (125g) Pea Shoots
- 1/4 cup (62.5g) Sunflower Seeds
Directions
- Spread all 4 Slices of bread with Lemon Aioli
- Divide and layer on mushrooms, jalapeno pepper, baby spinach, tomatoes, avocado, summer squash, red onions, cucumber ribbons, swiss, provolone, and cheddar on top of 2 slices of bread
- Garnish with scallions and pea shoots
- Sprinkle sunflower seeds into the other 2 slices of bread give a gentle push to stick into the lemon aioli and top to complete the sandwich build
