Healthy Breakfast Wrap

Breakfast Wrap:

  • 4 Dempster’s® Ancient Grains Large Tortillas
  • 1 Cup (250g) Chickpeas, drained
  • 2 Tbsp (30g) Tahini
  • 1 Tsp (5mL) Lemon Juice
  • 1 Tbsp (15g) Olive Oil
  • 3 Cups (750g) Baby Kale
  • 1 Avocado, peeled, pitted, and sliced
  • 8 Hard Boiled Eggs, sliced
  • 4 Tbsp (60g) Hemp Hearts

Honey Dijon Vinaigrette:

  • 3 Tbsp (45g) Dijon Mustard
  • 2 Tbsp (30g) Honey
  • 1 Tbsp (15mL) White Vinegar
  • 1 Tbsp (15mL) Olive Oil


  1. In a mixing bowl, roughly mash up chickpeas with a fork, then, mix in tahini, lemon juice and olive oil.
  2. Heat up a dry fry pan over high heat and quickly toast up each tortilla for about 20-30 seconds per side until toasty, but, still pliable.
  3. Equally divide and spread each tortilla with chickpea mixture, scatter with baby kale, then, layer on avocado slices, egg slices, and sprinkle with hemp hearts.
  4. Fold up the bottom and wrap to serve with honey Dijon vinaigrette for dipping.
