Honey Dijon Chicken Wrap

Ingredients
- 2 Dempster's® Original Large Tortillas
- 1/4 cup (60ml) honey
- 1/4 cup (60ml) mayonnaise
- 1/4 cup (60ml) dijon mustard
- 1 tbsp (15ml) white vinegar
- 1/2 lb boneless/skinless chicken breast (2 small chicken breasts)
- 1 tbsp (15ml) extra virgin olive oil
- salt and pepper, to taste
- 1 cup (35g) baby spinach
- 1/2 cup (100g) cherry tomatoes, sliced in half (8 cherry tomatoes)
- 1/2 cup avocado (70g), sliced (1/2 medium avocado)
- 1/4 cup (6g) microgreens, optional
Directions
- In a small bowl, combine honey, mayonnaise, dijon mustard and white vinegar. Set aside.
- Pat the chicken breasts dry, coat with olive oil and sprinkle with salt and pepper. Grill for 5 minutes on each side, until cooked through (an internal temperature of 165ºF / 75ºC)
- Cut the chicken into long strips. Divide spinach, cherry tomatoes and avocado between tortillas, and top with chicken strips and microgreens.
- Drizzle with the honey dijon dressing, roll up and serve.
Tip: Add bacon for extra crispiness.
Tip: Reserve extra Dijon dressing and use it on your salads for up to a week.
