Directions

  1. The night before, prepare tomato jam by heating up combining all of the ingredients in a medium saucepan and heating it to a boil
  2. Lower heat and simmer for 1 1/2 - 2 hours, stirring regularly to prevent scorching/burning the bottom, until a jam-like consistency is reached
  3. Turn off the heat, wait to cool and then transfer to a jar and refrigerate overnight.
  4. Prepare avocado fresca by mashing avocadoes in a medium bowl with lime juice, lime zest and pico de gallo
  5. Season with salt & pepper, to taste, cover with wrap and set aside
  6. Remove sausage meat from casings, and, combine with ground beef in a large bowl
  7. Mix in parmesan, onion powder and oregano until well incorporated without overworking the meat
  8. Form into 8 equal uniform patties and set aside
  9. Heat up a heavy frying pan, over high heat and cook pancetta in single layers for about 2 minutes per side until caramelized and crispy, ensuring not to overcrowd the pan
  10. Transfer to a paper towel-lined plate to soak up excess grease
  11. Working in batches, give the pan a quick wipe and melt 2 tbsp (30g) of butter over medium heat
  12. Then add 4 eggs into the pan and cook for about 3-5 minutes until the white is completely set
  13. Remove from pan and season with salt & pepper, to taste
  14. Repeat the process for the next set of eggs
  15. In a heavy non-stick pan/skillet, cook the patties over medium-high heat for about 5 minutes per side, then top with gouda cheese and turn the heat off
  16. Onto the bottom of each hamburger bun add the cooked sausage patty, fried egg, avocado fresca, and tomato jam and finish with crispy pancetta and top with hamburger bun
