Italian Avocado Breakfast Burger

Ingredients
Sandwich:
- 1 package of Villaggio® Toscana Extra Soft Hamburger Buns
- 1 lb (450g) Ground Beef
- 6 pieces 1 lb (450g) Spicy Italian Sausages
- 1/2 cup (125g) Grated Parmesan Cheese
- 1 tbsp (15g) Onion Powder
- 1 tbsp (15g) Fresh Oregano, chopped
- 17 oz (500g) Gouda Cheese, sliced
- 16 Slices of 8oz (225g) Pancetta
- 8 large Eggs
Tomato Jam (Make Ahead):
- 2 lbs (1 Kg) Roma or Plum Tomatoes, chopped
- 1/2 cup (125g) Sugar
- 1/4 cup (62.5ml) Lemon Juice
- 1 tbsp (15g) Ginger, grated
- 1 tsp (5g) Salt
- 1/2 tsp (2.5g) ground Cumin
- 1/2 tsp (2.5g) crushed Red Pepper
- 1/2 tsp (2.5g) Garlic Powder
Avocado Fresca:
- 2 ripe Avocados, peeled and pitted
- 1 Lime, juiced and zested
- 1/2 cup (125g) Pico de Gallo
- Salt & Pepper, to taste
Directions
- The night before, prepare tomato jam by heating up combining all of the ingredients in a medium saucepan and heating it to a boil
- Lower heat and simmer for 1 1/2 - 2 hours, stirring regularly to prevent scorching/burning the bottom, until a jam-like consistency is reached
- Turn off the heat, wait to cool and then transfer to a jar and refrigerate overnight.
- Prepare avocado fresca by mashing avocadoes in a medium bowl with lime juice, lime zest and pico de gallo
- Season with salt & pepper, to taste, cover with wrap and set aside
- Remove sausage meat from casings, and, combine with ground beef in a large bowl
- Mix in parmesan, onion powder and oregano until well incorporated without overworking the meat
- Form into 8 equal uniform patties and set aside
- Heat up a heavy frying pan, over high heat and cook pancetta in single layers for about 2 minutes per side until caramelized and crispy, ensuring not to overcrowd the pan
- Transfer to a paper towel-lined plate to soak up excess grease
- Working in batches, give the pan a quick wipe and melt 2 tbsp (30g) of butter over medium heat
- Then add 4 eggs into the pan and cook for about 3-5 minutes until the white is completely set
- Remove from pan and season with salt & pepper, to taste
- Repeat the process for the next set of eggs
- In a heavy non-stick pan/skillet, cook the patties over medium-high heat for about 5 minutes per side, then top with gouda cheese and turn the heat off
- Onto the bottom of each hamburger bun add the cooked sausage patty, fried egg, avocado fresca, and tomato jam and finish with crispy pancetta and top with hamburger bun
