Italian Bomba Avocado Toast

Ingredients

  • 2 slices of Villaggio® Classico Italian Style Thick Slice White Bread
  • 2 Avocado, mashed
  • 1 tbsp (30mL) Lime or Lemon Juice
  • 2 Poached Eggs
  • 4 tbsp (120g) spicy Italian Bomba Calabrian Pepper
  • Fuoco Sauce
  • 2 tbsp (60g) Everything Seasoning
  • Grape Tomatoes, roasted (see recipe directions)

Directions

  1. Toast 2 slices of bread until golden and firm
  2. In a saucepan, heat up water over high heat, until it boils, then lower the heat until the water is at a bare simmer
  3. Working with one egg at a time, crack an egg into a small bowl/cup/ladle, and gently slip it into the water
  4. Turn off the heat, cover the pan and allow to sit for 4 minutes
  5. Remove the eggs with a slotted spoon and set aside
  6. Repeat the process for the second egg
  7. Remove pits from Avocadoes, and using a large spoon scoop the flesh out into a bowl and mash with a fork until desired smooth consistency, then spread out onto toast
  8. Layer with Poached Eggs and Calabrian Pepper
  9. Sprinkle liberally with Everything Seasoning
  10. Garnish with Roasted Grape Tomatoes: Coat 2 handfuls of Grape Tomatoes with a splash of Olive Oil and Salt & Pepper, to taste, then, roast at 400°F (205°C) for approximately 20 minutes
