Keto Breakfast Chilaquiles

Ingredients

  • 2 Oroweat® Keto Tortilla
  • 2 tbsp (30ml) Vegetable Oil
  • 2 Large Eggs
  • 1/4 cup (25g) Cheddar Cheese, shredded
  • 1/3 cup (80ml) Guacamole, store-bought
  • 1 Medium Tomato (50g), diced
  • Hot Sauce (optional)
  • 2 tbsp (3g) Cilantro, chopped (optional)

Directions

  1. Heat vegetable oil in a frying pan over medium heat.
  2. Fry the keto tortillas one by one until crispy, about 2 minutes, flipping often. Set aside, discard any remaining oil.
  3. Fry the bacon until golden and crispy, about 5 minutes. Set aside.
  4. Fry the eggs sunny side up in the bacon fat until reaching the desired consistency. Sprinkle eggs with cheese in the last 2 minutes so the cheese melts on top.
  5. Spread each fried keto tortilla with guacamole, top with egg, crispy bacon, tomatoes, and if using, hot sauce and cilantro.
