Mini Egg White Breakfast Bites

Ingredients
- 12 Dempster’s® Original Medium Tortillas
- Cooking spray
- 12 Prosciutto slices
- 2 cups Egg White
- 4 tbsp Chives, minced
- 1/2 cup Red Peppers, finely chopped
- Salt and Pepper, to taste
Directions
- Preheat the oven to 350°F (176°C)
- Cut each tortilla into a 5-inch circle.
- Grease a 12-cup muffin tray with cooking spray and fill with tortillas. Line the tortilla with prosciutto.
- In a small bowl, whisk egg whites, chives, red peppers, salt and pepper.
- Divide the egg mixture between the tortilla cups.
- Place the muffin tray on a cooking sheet and bake for 30-35 minutes or until the eggs are set. If the tortillas start getting too dark, cover with foil for the last 10 minutes.
Tip : you can keep these in the fridge for up to 3 days and just reheat before eating!
