Parmesan Brussels Sprout and Honey Crouton Bread Salad | Panzanella

  • 4 Villaggio® 100% Whole Wheat Bread slices
  • 4 cups (1l) Brussels Sprouts
  • 4 tbsp (60ml) Butter
  • 4 tbsp (60ml) Olive oil
  • 1 Garlic Clove, chopped
  • 4 tbsp (60ml) Honey
  • 1/2 tsp (3ml) Herbes de Provence blend
  • 1/2 cup (125ml) Caesar dressing
  • 1/2 cup (125ml) grated Parmesan
  • Salt and Pepper to taste


  1. Clean and remove the outer leaves of the Brussels Sprouts, then cut them in half.
  2. In a hot pan over medium-low heat, sauté the Brussels sprouts in a little melted butter for 10 minutes, stirring occasionally.
  3. Add the garlic, salt, pepper and remove from the heat.
  4. Meanwhile, cut the bread slices into croutons.
  5. In the same hot pan, add the olive oil, honey, and pieces of bread and gently mix together until the croutons are well coated.
  6. Add the Herbes de Provence and continue cooking on medium heat until the croutons are crispy and golden.
  7. Place the Brussels Sprouts, bread croutons, dressing and Parmesan onto each plate.
