Parmesan Roasted Cauliflower Tacos

Parmesan Roasted Cauliflower Tacos bring a new look to taco night. Roasted cauliflower tossed with breadcrumbs and spices is hearty and flavourful. Served in a Dempster's® Original Medium Tortilla with cilantro and green onion, it's a fresh and tasty take on a family favourite.

Ingredients

  • 6 Dempster’s® Original Medium Tortillas
  • 1 head of cauliflower, cut into bite-size florets
  • 3 tbsp (45 mL) olive oil|
  • 1/2 tsp (2 mL) cumin
  • 1/2 tsp (2 mL) paprika
  • pinch of cayenne
  • 1/3 cup (80 mL) parmesan cheese, finely grated
  • 2 tbsp (30 mL) bread crumbs
  • 1 cup (250 mL) shredded lettuce
  • 1/2 cup (125 mL) salsa
  • 3 tbsp (45 mL) sour cream
  • 2 green onions, thinly sliced
  • chopped fresh cilantro

Directions

  1. Preheat oven to 375°F (190°C).
  2. Toss cauliflower with olive oil, cumin, paprika, cayenne, parmesan cheese and breadcrumbs.
  3. Spread on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy. Meanwhile, wrap the tortillas in foil and place them in the oven for 15 minutes to warm through.
  5. Assemble tacos by dividing the cauliflower mixture evenly between the tortillas and topping them with shredded lettuce, salsa, sour cream, onions and cilantro.
