Roast Pork Sandwich

Ingredients

  • 1 package of Villaggio® Toscana Extra Soft Hamburger Buns
  • 2 lb (1 kg) Pork Loin
  • Olive Oil
  • 1/2 tsp (2.5g) Oregano
  • 1/2 tsp (2.5g) Basil
  • 1/2 tsp (2.5g) Rosemary
  • 1/2 tsp (2.5g) Garlic Powder
  • 1/2 tsp (2.5g) Onion Powder
  • 1/4 tsp (1.25g) Mustard Powder
  • 1/2 tsp (2.5g) Paprika
  • Sprinkle of Cayenne Pepper
  • Salt & Pepper, to taste
  • 1 cup (250g) Mayonnaise
  • 1 bunch of 10oz (280g) Broccoli Rabe, trimmed
  • Olive Oil for drizzling
  • 16 slices Provolone
  • 1/2 Cup (125g) Banana Peppers
  • 6 oz (180 g) Crispy Fried Onions

Directions

  1. Preheat oven to 350°F (180° C) or heat grill to medium high heat
  2. Rub Pork Loin with Olive Oil
  3. In a small bowl, mix together all of the spices and rub all over Pork Loin
  4. Roast at 350°F (180°C) for approximately 1 hour OR grill until internal temperature reaches 145°F (65°C)
  5. If grilling, ensure even cooking by rotating roast every 15-20 minutes
  6. Allow to rest for 10 minutes, before slicing
  7. Turn Up oven to 400°F (205°C)
  8. Spread Broccoli Rabe onto a baking sheet/roasting pan and drizzle/coat with Olive Oil and sprinkle with Salt & Pepper to taste
  9. Roast at 400°F (205°C) for 8 -10 minutes
  10. Turn Down oven to 375°F (190°C)
  11. Spread the top halves of hamburger buns with Mayonnaise and set aside
  12. Layer the bottom halves of the hamburger buns with slices of Pork, roasted Broccoli Rabe, Banana Peppers and Provolone
  13. Place onto a baking sheet and warm in oven at 375°F (190°C) until cheese is melted
  14. Remove from oven and top with Crispy Fried Onions and the top bun, spread of mayonnaise
