Roasted Sweet Potato Sandwich

  • 4 slices of Villaggio Artesano® Original White Bread
  • 1 large Sweet Potato, thinly sliced
  • 4 tbsp (60ml) Olive Oil
  • 1 tsp (5g) ground Cumin
  • 1 tsp (5g) Chili Powder
  • 1/2 cup (125g) Goat Cheese
  • 2 tbsp (15g) Mayonnaise
  • 1/2 cup (125g) Sundried Tomatoes
  • 1 cup (250g) fresh Baby Spinach
  • 4 slices of Havarti Cheese
  • 1/4 cup (62.5g) Walnuts


  1. Preheat the oven to 400°F (205°C)
  2. Toss sweet potato slices with olive oil, cumin, and chili powder to coat
  3. Transfer onto a parchment-lined baking sheet
  4. Roast at 400°F (205°C) for 7-8 minutes until cooked and crispy brown
  5. Spread 2 slices of bread with goat cheese
  6. Spread 2 slices of bread with mayonnaise, then, top with roasted sweet potatoes, sundried tomatoes, baby spinach and havarti
  7. Sprinkle walnuts over top and cap with remaining slice of bread, spread with goat cheese
