This aromatic Curried Chicken Panini is a natural fall favourite. Featuring Dempster’s® 100% Whole Grains Honey & Oatmeal Bread filled with a savoury chicken curry mixture, this rich and flavourful grilled sandwich makes a satisfying lunch or dinner dish. Customize it with mild, medium or hot curry paste to suit your taste.

Ingredients

  • 4 slices Dempster’s® 100% Whole Grains Honey & Oatmeal Bread
  • 1 cup (250 mL) shredded cooked chicken
  • 1/4 cup (60 mL) mayonnaise
  • 1 tbsp (15 mL) Indian curry paste
  • 1 tbsp (15 mL) lemon juice
  • 1 tbsp (15 mL) raisins
  • 1 tbsp (15 mL) finely chopped fresh cilantro
  • 2 slices mozzarella cheese

Directions

  1. Stir together chicken, mayonnaise, curry paste, lemon juice, raisins and cilantro until well mixed.
  2. Spoon onto 2 slices of bread and top each with a slice of mozzarella; cap with remaining bread.
  3. Preheat the panini press according to the manufacturer's instructions.
  4. Grill sandwiches for about 4 minutes or until bread is toasted and cheese is melted.

Tips:
Use mild, medium or hot curry paste depending on preference.
Serve with mango chutney if desired.
Alternatively, pan-fry the sandwich, in a greased skillet set over medium heat, pressing with a spatula until the bread is toasted and the cheese is melted.
