Spanakopita Grilled Cheese Sandwich

Ingredients

  • 4 slices of Villaggio® Sesame Italian Style Thick Slice White Bread
  • 1 tbsp (15ml) Olive Oil
  • 1 clove of Garlic, minced
  • 1 large Shallot, chopped
  • 2 cups (500g) Baby Spinach
  • 1 tsp (5g) Fresh Rosemary, finely chopped
  • 1/2 cup (125g) Feta Cheese, crumbled
  • 2 tbsp (30g) Butter
  • 6 slices of Provolone
  • Salt & Pepper, to taste

Directions

  1. Heat up olive oil in a skillet, over medium heat, and cook the garlic and shallot for about 3-5 minutes, until garlic is golden brown
  2. Add in Spinach and continue cooking for a few more minutes, until Spinach is wilted. Add in Rosemary, and Salt & Pepper to taste, turn off the heat and mix in Feta Cheese, set aside
  3. Give the skillet a quick wipe and place back over medium heat
  4. Evenly divide the butter and spread it on one side of each slice of bread
  5. Place 2 slices of the bread, butter side down, then, layer with a slice of Provolone
  6. Divide the spinach mixture, in half, then, pile onto each slice and top with remaining slices of Provolone and slices of bread, butter side up
  7. Turn the heat down to low and cook for approximately 5 minutes, then, flip and cook for another 3 minutes until heated through and golden
  8. Serve with olives on the side
