Spinach Artichoke Melt

  • 4 slices of Villaggio Artesano® Sourdough Bread
  • 2 tbsp (30g) Unsalted Butter
  • 1 clove of Garlic, minced
  • 2 tbsp (30g) all-purpose Flour
  • 1/2 cup (125ml) Half-and-Half Cream
  • 1 oz (28g) Goat Cheese, crumbled
  • 1/2 cup (125g) Provolone Cheese, grated
  • 1/2 cup (125g) Cheddar Cheese, grated
  • 1/2 tsp (5g) Red Pepper Flakes
  • Flaky Sea Salt and Fresh Ground Pepper, to taste
  • 1/2 cup (125g) Jarred Artichoke Hearts, sliced
  • 1 cup (250g) Baby Spinach, packed


  1. Melt 1 tbsp (15g) of Butter, in a small pan over medium heat, then add garlic and cook for 2-3 minutes
  2. Sprinkle and stir in flour and continue cooking for another 3-4 minutes, then, slowly stir in cream and continue stirring until smooth and incorporated, with no lumps
  3. Add in goat cheese and continue stirring until melted and smooth, with no lumps
  4. Repeat the process with provolone cheese and cheddar cheese
  5. Finish with a sprinkle of red pepper flakes, salt and pepper to taste
  6. Add in artichoke hearts and baby spinach to incorporate
  7. Evenly divide and spoon over 2 slices of bread
  8. Top with the remaining slices
  9. Heat up the remaining 1 tbsp (15g) of butter, over medium-low heat and grill the sandwich for 2-3 minutes, then, turn it over and cook for an additional 2-3 minutes on the other side
