Sweet Potato Marshmallow Bocadillo/Rail

  • 1 pack of Villaggio Artesano® Classic White Baguettes
  • 1 large Sweet Potato
  • 1 tbsp (15g) Butter
  • 1/4 cup (62.5mL) Maple Syrup
  • 2 tbsp (30g) Brown Sugar
  • 1/2 tsp (2.5g) Ground Cinnamon
  • 1 cup (250g) Mini Marshmallows


  1. Prepare baguettes according to package directions
  2. Preheat oven to 425°F (220°C)
  3. Bake sweet potato at 425°F (220°C) for 40-50 minutes until soft
  4. Turn oven down to 375°F (190°C)
  5. Allow to cool before handling, then, scoop out the middle and mash in a mixing bowl with butter, maple syrup, brown sugar and cinnamon
  6. Allow to cool to at least room temperature before gently stirring in marshmallows
  7. Cut baguettes lengthwise and spread sweet potato marshmallow mixture evenly along the center of each baguette
  8. Place on parchment lined baking sheet and roast at 375°F (190°C) for 5 minutes to melt and toast up marshmallows
  9. Serve immediately to delighted guests
