Tasty Tortilla Muffuletta

This Tasty Tortilla Muffuletta is a quick-and-easy take on a classic New Orleans sandwich. Enjoy a savoury blend of meats, cheeses, olives and roasted red peppers folded and baked into a delicious Dempster’s® Original 10” Tortilla. For an extra kick, add slices of pickled hot peppers. Serves two.

Ingredients

  • 2 Dempster’s® Original Large Tortillas
  • 4 tsp (20 mL) olive tapenade
  • 2 slices provolone cheese
  • 4 slices Genoa salami
  • 4 slices capicola
  • 2 slices ham
  • 2 slices Fontina cheese
  • 1 jarred roasted red pepper, sliced
  • 1 tbsp (15 mL) olive oil

Directions

  1. Line the baking sheet with parchment paper.
  2. Lay tortillas on a clean work surface; spread olive tapenade evenly over half of each tortilla.
  3. Layer a slice of provolone, 2 slices salami, 2 slices capicola, a slice of ham and a slice of Fontina over olive tapenade on each tortilla half; scatter roasted red peppers over the top.
  4. Fold the tortilla in half over the filling.
  5. Brush both sides of the tortilla with oil; place on the prepared pan.
  6. Bake in 400°F (200°C) oven for 10 minutes or until cheese starts to melt, and tortillas are lightly browned.

Tips: Add slices of pickled hot peppers for an extra kick.
