Toasted Chicken, Avocado and Purple Slaw Sandwich

This colourful sandwich packs a ton of healthy goodness between slices of Seed Lover’s with Chia Bread.

Ingredients

Sandwich:

  • 4 slices Dempster's® 100% Whole Grains Double Flax Bread, toasted
  • 1/3 cup (75 mL) hummus
  • 1 1/2 cups (375 mL) shredded cooked chicken
  • 1 avocado, peeled, pitted and sliced

Purple Slaw:

  • 3 tbsp (45 mL) olive oil
  • 1 tbsp (15 mL) lime juice
  • 1/4 tsp (1 mL) each salt and pepper
  • 1 cup (250 mL) shredded red cabbage
  • 1/2 cup (125 mL) grated carrot
  • 1/4 cup (60 mL) chopped green onion

Directions

  1. Whisk together olive oil, lime juice, salt and pepper.
  2. Add cabbage, carrot and green onion; toss well.
  3. Spread bread slices with hummus.
  4. Top 2 slices of bread with chicken, avocado and slaw.
  5. Cap with remaining bread.

Tips: Use leftover or store-bought roast chicken. The leftover slaw can be covered and refrigerated for up to one day.
