This colourful sandwich packs a ton of healthy goodness between slices of Seed Lover’s with Chia Bread.
Ingredients
Sandwich:
- 4 slices Dempster's® 100% Whole Grains Double Flax Bread, toasted
- 1/3 cup (75 mL) hummus
- 1 1/2 cups (375 mL) shredded cooked chicken
- 1 avocado, peeled, pitted and sliced
Purple Slaw:
- 3 tbsp (45 mL) olive oil
- 1 tbsp (15 mL) lime juice
- 1/4 tsp (1 mL) each salt and pepper
- 1 cup (250 mL) shredded red cabbage
- 1/2 cup (125 mL) grated carrot
- 1/4 cup (60 mL) chopped green onion
Directions
- Whisk together olive oil, lime juice, salt and pepper.
- Add cabbage, carrot and green onion; toss well.
- Spread bread slices with hummus.
- Top 2 slices of bread with chicken, avocado and slaw.
- Cap with remaining bread.
Tips: Use leftover or store-bought roast chicken. The leftover slaw can be covered and refrigerated for up to one day.
