Ingredients
- 3 Dempster’s® Original Large Tortillas
 - 2 (170 g) Cans of flaked tuna
 - 1/2 Red pepper, diced
 - 1 Stalk celery, diced
 - 1 Shallot, diced
 - 1/3 cup (80 mL) Mayonnaise
 - 1 tsp (5 mL) Dijon mustard
 - 1 1/2 cups (375 mL) Grated Old Cheddar cheese, divided
 - 1/4 cup (60 mL) Melted butter
 
Directions
- Mix together tuna, pepper, celery, shallot, mayonnaise and mustard in a medium bowl.
 - Assemble the quesadillas by sprinkling 1/4 cup (60 mL) of cheese on half of each tortilla.
 - Divide tuna filling between the three and spread on top of the cheese.
 - Top with the remaining cheese and fold in half.
 - Brush both sides of each quesadilla with melted butter.
 - Place in a large skillet over medium-high heat and cook for 3-4 minutes per side or until golden brown and the cheese has melted.
