It’s soft and chewy. The cheese is gooey. Surprise, it’s vegan! This vegan mozzarella and fig panini pairs perfectly with our naturally fermented Roasted Garlic & Sea Salt bread, and will be your new sweet and savoury lunchtime go-to.
Ingredients
- 2 slices of Stonemill® Bakehouse Roasted Garlic & Sea Salt Bread
- 2 tablespoon (30ml) olive Oil
- 3-4 slices (or 1/2 cup shredded) Vegan Mozzarella Cheese (also works with other cheese)
- Handful of arugula
- 1 tablespoon (15ml) Fig Jam
Directions
- Turn on and heat up panini press
- Brush both sides of 2 slices of Roasted Garlic & Sea Salt bread with olive oil
- Add a generous amount of vegan mozzarella cheese to one slice
- Top the cheese with a scoop of fig jam and spread it out
- Add arugula on top of the jam
- Close the sandwich with the other piece of oiled bread
- Place into panini press until golden brown and the cheese is melted, enjoy!
