Yummy Italian Style School Lunch Deli Sandwich

Ingredients

  • 4 slices of Villaggio® Classico Italian Style Thick Sliced White Bread
  • 16 slices of Pepperoni
  • 8 slices of Capicolla
  • 8 slices of Calabrese Salami
  • 1 Ball of Fresh Mozzarella, sliced
  • 1 Tomato, thinly sliced
  • 1 Roasted Red Pepper, thinly sliced
  • 1 cup (250mL) Fresh Baby Arugula
  • 2 tbsp (30mL) of Pesto
  • 2 tbsp (30mL Balsamic Vinegar
  • 2 tbsp (30mL) Mayonnaise
  • Coarse Kosher Salt or Sea Salt
  • Freshly Ground Pepper

Directions

  1. Evenly divide and spread the pesto on 2 slices of bread
  2. Evenly divide and spread mayonnaise on the remaining 2 slices of bread
  3. Toss arugula with balsamic vinegar, and set aside
  4. Over the pesto bread slices, evenly layer pepperoni, capicola, salami, mozzarella, balsamic tossed arugula, and top each with 3 or 4 tomato slices
  5. Season with salt and pepper
  6. Top with mayonnaise bread slices
