Yuzu Miso Chicken Salad Sandwich

Ingredients

  • 4 slices of Villaggio Artesano® Sourdough Bread
  • 2 Chicken Breasts: Grilled and Sliced
  • 1 tsp (5g) Orange Zest
  • 1 tbsp (15ml) Orange Juice
  • 1 cup (250g) Iceberg Lettuce, shredded
  • 1/4 cup (62.5ml) Yuzu Sauce
  • 2 tbsp (30g) Miso
  • 1 Ttsp (5g) Granulated Sugar
  • 1 tbsp (15g) Sesame Paste
  • 1 tbsp (15ml) Yuzu Juice
  • 1 tsp (5ml) Soy Sauce
  • 1/2 Red Onion, sliced thin
  • 4 1/2 Oz (125g) Cucumber Ribbons
  • 4 1/2 Oz (125g) Carrot Ribbons

Directions

  1. Toss chicken with orange zest and orange juice
  2. In a mixing bowl, toss the lettuce with yuzu sauce, miso, sugar, sesame paste, yuzu juice, soy sauce, and red onion
  3. Layer 2 slices of bread with lettuce mixture, then add chicken and top with cucumber and carrot ribbons
  4. Drizzle with more sauce, from the lettuce mix and top with the remaining slice of bread
