Zucchini Bread Pudding

  • 1 loaf of Villaggio® Classico Italian Style Thick Slice White Bread
  • 3 Eggs
  • 2 cups (500g) Zucchini, grated (2 Zucchinis)
  • 1 cup (250g) Cheddar Cheese, grated
  • 1/2 cup (125g) Vidalia Onion, chopped
  • 2 Celery Sticks, finely chopped
  • 4 tbsp (120g) Flour
  • 1 cup (250g) Pumpkin Puree
  • 1/2 Cup (125ml) Butter, melted
  • 1 tbsp (30g) Poultry Seasoning
  • 1 tsp (5g) Pumpkin Spice
  • 2 cups (500ml) Milk
  • Salt & Pepper, to taste


  1. Preheat oven to 375°F (190°C)
  2. Cut 1 loaf bread into large cubes
  3. In a large mixing bowl, whisk the eggs then, add in Zucchini, Cheddar Cheese, Vidalia Onion, Celery, and Flour
  4. Stir in Pumpkin Puree, Melted Butter, Poultry Seasonings and Pumpkin Spice, until well blended. Add in Milk and stir.
  5. Add cubed bread and stir again, until all of the bread cubes are coated with the mixture and soaked through
  6. Transfer to an oven-proof dish
  7. Bake at 375°F (190°C) for 25 to 30 minutes until golden crispy and the top has properly firmed up/set
  8. Serve with eggs and or bacon
  9. Can be made the night before and cooked from fridge in the morning
