15-Minute Tomato Soup with Garlic Cheese Toast

This classic soup never goes out of style. This super-quick homemade take is topped with ooey-gooey garlic bread prepared with Villaggio® Rustico™ Sourdough.

Ingredients

  • 4 slices Villaggio® Rustico™ Sourdough
  • 1/3 cup (75 mL) garlic butter, divided
  • 1 onion, sliced
  • 1 can (796 mL) plum tomatoes
  • 1 jarred roasted red pepper
  • 4 cups (1 L) reduced-sodium chicken broth, divided
  • 1/2 tsp (2 mL) dried oregano
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) black pepper
  • 1/2 cup (125 mL) heavy or whipping (35%) cream
  • 2 tbsp (30 mL) torn fresh basil leaves
  • 2 cups (500 mL) shredded Italian cheese blend

Directions

  1. Preheat broiler.
  2. In a medium saucepan set over medium heat, melt 2 tbsp (30 mL) garlic butter. Cook onion for 2 to 3 minutes or until starting to soften. Transfer to blender (reserve saucepan).
  3. To blender, add tomatoes, roasted red pepper, 1 cup (250 mL) chicken broth, oregano, salt and pepper; purée until smooth.
  4. Pour the tomato mixture into the reserved saucepan and set over high heat. Stir in the remaining 3 cups (750 mL) broth; bring to a boil. Stir in cream; bring back to a boil. Reduce heat to medium. Cook for 5 minutes.
  5. Meanwhile, prepare garlic bread. Spread remaining 3 tbsp (45 mL) garlic butter evenly over bread slices. Sprinkle with the Italian cheese blend.
  6. Broil on a foil-lined baking sheet for 1 to 2 minutes or until cheese is melted and bubbling.
  7. Divide soup among 4 large bowls. Top each with basil and garlic bread and serve.

Tips: Alternatively, top garlic bread with shredded Cheddar cheese if preferred.
Substitute the basil for finely chopped chives or parsley if desired.
To make your own garlic butter, stir together 1/3 cup softened butter and 2 grated garlic cloves. If desired, season with salt and finely chopped chives and/or parsley.
