This high-protein sandwich made with soft and delicious Dempster’s Protein with Whole Grain Loaf makes for the perfect quick and easy breakfast sandwich.

Ingredients

  • 2 slices of Dempster’s Protein with Whole Grain Loaf, toasted
  • 2 eggs
  • 1 tbsp (15 ml) sour cream
  • 1 tbsp (15 ml) butter
  • 1 cup (250 ml) baby spinach
  • Salt to taste
  • 4 cherry or grape tomatoes, halved
  • 1 tbsp (15 ml) feta, crumbled
  • 1 tsp (5 ml) chives, chopped

Directions

  1. Whisk eggs with sour cream in a small bowl until smooth.
  2. Melt butter in a medium skillet over medium-low heat.
  3. Pour egg mixture into the skillet. Cook to a soft scramble or desired doneness.
  4. Return skillet to heat and cook spinach until wilted, 2 to 3 minutes. Season with salt to taste.
  5. Combine tomatoes, feta, and chives in a small bowl.
  6. To assemble the sandwich, spread wilted spinach on the bottom slice of bread and top with scrambled eggs.
  7. Spoon the tomato mixture over the top and close with the top slice of bread.

Tip: For an extra hit of protein, replace the sour cream in the scrambled eggs with 2 tablespoons of cottage cheese and blend the mixture for a smooth consistency before cooking.
