This high-protein sandwich made with soft and delicious Dempster’s Protein with Whole Grain Loaf makes for the perfect quick and easy breakfast sandwich.
Ingredients
- 2 slices of Dempster’s Protein with Whole Grain Loaf, toasted
- 2 eggs
- 1 tbsp (15 ml) sour cream
- 1 tbsp (15 ml) butter
- 1 cup (250 ml) baby spinach
- Salt to taste
- 4 cherry or grape tomatoes, halved
- 1 tbsp (15 ml) feta, crumbled
- 1 tsp (5 ml) chives, chopped
Directions
- Whisk eggs with sour cream in a small bowl until smooth.
- Melt butter in a medium skillet over medium-low heat.
- Pour egg mixture into the skillet. Cook to a soft scramble or desired doneness.
- Return skillet to heat and cook spinach until wilted, 2 to 3 minutes. Season with salt to taste.
- Combine tomatoes, feta, and chives in a small bowl.
- To assemble the sandwich, spread wilted spinach on the bottom slice of bread and top with scrambled eggs.
- Spoon the tomato mixture over the top and close with the top slice of bread.
Tip: For an extra hit of protein, replace the sour cream in the scrambled eggs with 2 tablespoons of cottage cheese and blend the mixture for a smooth consistency before cooking.
