Crunchy Cinnamon Apple and Nut Butter Quesadilla

Ingredients

  • 2 Dempster’s® Original Medium Tortillas
  • 1 Green Apple, thinly sliced
  • 2 tbsp Butter, divided
  • 2 tbsp Brown Sugar
  • 1/2 tsp Cinnamon
  • 1/2 cup Nut Butter (Almond, Peanut, or Nut-Free Alternative)
  • 1/2 cup Granola
  • 1/4 cup Toasted Coconut Chips (optional)
  • 3 tbsp Strawberry Jam

Directions

  1. In a large non-stick skillet, heat half the butter over medium-high heat. Sauté apples for 1 minute, then add the sugar and cinnamon. Reduce heat and cook for 1-2 minutes until apples are tender-crisp, stirring occasionally. Transfer to a bowl and carefully wipe out the pan.
  2. Place two tortillas on a cutting board and spread half with nut butter. Add cooked apples, then top with granola and coconut chips, if using. Fold over the tortilla.
  3. Heat the same skillet over medium-high heat. Add the butter and cook for 2 minutes per side until golden brown. Fold over again.
  4. In a small microwaveable dish, add jam and 1 tbsp water. Microwave for a few seconds, then stir until combined. Drizzle over the quesadilla.
