Toasted slices of Villaggio® Rustico™ Sourdough are rubbed with garlic and drizzled with olive oil to make a delectable pizza-inspired sandwich stuffed with pan-roasted cherry tomatoes, fresh mozzarella and prosciutto.
Ingredients
- 8 slices Villaggio® Rustico™ Sourdough, toasted
- 2 cups (500 mL) cherry tomatoes
- 2 garlic cloves, whole
- 2 Tbsp (30 mL) olive oil
- 8 thin slices prosciutto
- 1 (8 oz/250 g) ball fresh mozzarella cheese, sliced
- 1 cup (250 mL) lightly packed arugula
- 1/4 cup (60 mL) torn fresh basil leaves
Directions
- Preheat broiler.
- Heat large skillet over medium-high heat. Cook tomatoes for 4 to 6 minutes or until skins start to blister and tomatoes soften.
- Lightly rub both sides of each toast with garlic, then drizzle with olive oil.
- Top toasted sourdough with tomatoes, prosciutto and mozzarella.
- Broil for 2 to 3 minutes or until mozzarella is melted.
- Divide arugula and basil among 4 toasts, and cap with remaining toasts.
- Cut each sandwich in half to serve.
Tips: Substitute fresh mozzarella with regular sliced mozzarella if preferred.
Substitute prosciutto with salami or pepperoni slices if desired.
