Ingredients
- 8 slices Villaggio® Rustico™ Sourdough
- 2 tbsp (30 mL) olive oil
- 1 lb (500 g) mild Italian sausage, casings removed
- 1 onion, diced
- 1 red bell pepper, diced
- 3/4 cup (175 mL) tomato sauce
- 1/4 cup (60 mL) barbecue sauce
- 1 cup (250 mL) shredded mozzarella cheese
- 1/4 cup (60 mL) grated Parmesan cheese
Directions
- Preheat broiler.
- In large skillet set over medium-high heat, heat oil. Cook sausage for 5 to 6 minutes or until starting to brown. Stir in onion and red pepper. Cook for 2 to 3 minutes or until vegetables start to soften. Stir in tomato sauce and barbecue sauce; bring to a boil. Reduce heat to medium. Cook for 2 to 3 minutes or until sauce is thickened, vegetables are tender and sausage is cooked through.
- Meanwhile, arrange sourdough slices on foil-lined baking sheet. Broil, flipping once, for 2 minutes or until lightly toasted.
- Divide sloppy joe mixture among 4 slices sourdough. Sprinkle evenly with mozzarella and Parmesan.
- Broil for 1 to 2 minutes or until cheeses are melted. Serve immediately.
Tip: Garnish sloppy joe melts with chopped fresh parsley or basil if desired.
