Savoury Rustic Italian Quesadilla

Our Savoury Rustic Italian Quesadilla recipe is a delicious meal you can quickly whip up on a busy day. Featuring Dempster’s® Sundried Tomato 10” Tortillas, pesto, prosciutto and mozzarella, this quesadilla is a hearty dinner option that's rich in flavour. Serves two.

Ingredients

  • 2 Dempster’s® Sundried Tomato 10” Tortillas
  • 1/4 cup (60 mL) ready prepared pesto
  • 4 slices prosciutto, chopped
  • 1 tomato, diced
  • 1/2 cup (125 mL) shredded mozzarella cheese
  • 1/2 cup (125 mL) arugula
  • 1 tbsp (15 mL) olive oil

Directions

  1. SPREAD pesto over one side of tortillas.
  2. Top ½ of each tortilla with prosciutto, tomato, cheese and arugula and fold other half over filling.
  3. BRUSH outside of filled tortillas with oil.
  4. Grill in a skillet or panini press over medium-high heat just until toasted and cheese has melted, about 2 minute per side.
  5. Cut into wedges to serve.
