Vegetarian Dressing with Kohlrabi, Cranberries and Apples

Ingredients

  • 1 loaf of Villaggio® Italian Style Thick Slice 100% Whole Wheat Bread
  • 1 stick (4 tbsp/60g) Butter, melted
  • 1 Yellow Onion, cubed
  • 2 sticks of Celery, finely Diced
  • 2 Granny Smith Apples, roughly diced
  • 1 bunch (3 oz/85g) fresh Sage, chopped
  • 2 tbsp (30g) fresh Rosemary, chopped
  • 2 tbsp (30g) fresh Thyme, chopped
  • 1/2 cup (125g) fresh Parsley, chopped
  • 2 cups (500g) frozen / fresh Cranberries
  • 4 cups (1ltr) Vegetable Broth
  • 2 Kohlrabi, chopped

Directions

  1. Preheat Oven to 350°F (180°C)
  2. Dice 1 loaf of bread and transfer to a large mixing bowl
  3. Add in all of the chopped vegetables and herbs
  4. Toss in and incorporate the Cranberries
  5. Pour in Vegetable Broth and Butter (Melted) along with the Kohlrabi
  6. Season to taste with Salt & Pepper
  7. Transfer to an oven-proof baking dish and cover with foil
  8. Bake at 350°F (180°C) for 30 minutes, remove foil and cook for an additional 15 minutes until the top is golden brown and delicious
  9. Serve to your lucky family/guests
