Feta, Roasted Carrot, Honey and Mustard Toast

Ingredients

  • 4 Villaggio® Sesame Bread slices
  • 6 Nantes or multicolored Carrots
  • 1 Garlic Clove, chopped
  • 4 tbsp (60ml) Olive oil
  • 3 tbsp (45ml) Honey
  • 4 tbsp (60ml) Parsley Leaves, chopped
  • 1/2 cup (125ml) Feta, crumbled
  • 2 tbsp (30ml) Dijon mustard
  • Salt and Pepper to taste

Directions

  1. Preheat the oven to 200°C (400°F) with the rack in the middle position.
  2. Cut the carrots lengthwise into 4 batons.
  3. In a bowl, mix together the garlic, olive oil, honey, carrots, salt and pepper.
  4. Cover a baking sheet with parchment paper or a silicone mat, arrange the carrots and bake for 15 to 20 minutes.
  5. Allow to cool.
  6. Meanwhile, coat one side of each bread slice with mustard.
  7. Use the oven grill.
  8. Cover a baking sheet with parchment paper or a silicone mat, arrange the bread slices and cook for around 4 minutes until the mustard has browned.
  9. Cut the bread slices in half lengthwise.
  10. Divide the still-warm carrots, feta cheese, and parsley onto each piece of bread.
