Grilled Blueberry & Mascarpone Sandwich

Ingredients

  • 8 slices of Villaggio Artesano® White Bread
  • 1 tbsp (14 g) Butter
  • 1 tbsp (14 g) Brown Sugar
  • 2 cups (450 g) Fresh Blueberries
  • 1 Tub (500 g) Mascarpone
  • 8 oz (225 g) Brie
  • 1/2 cup (113 g) Fresh Basil
  • 1 Lemon zested
  • 1/2 cup (113 g) Butter
  • 1/2 cup (113 g) Olive Oil for frying

Directions

  1. Melt Butter in a frying pan or skillet and add in blueberries. Turn up the heat to high and cook for 5 mins., until they pop. Add in brown sugar and stir until evenly coated.
  2. Continue cooking for 20 - 30 minutes until it starts to thicken. Set aside.
  3. To build the sandwich, spread 4 slices of bread evenly with mascarpone cheese
  4. Evenly layer the remaining slices with brie, spoon on blueberries and top with fresh basil and fresh lemon zest
  5. Preheat Grill or Fry Pan on medium heat
  6. Assemble sandwiches and cook for 8 – 10 minutes per side until golden and crispy
