Grilled Zucchini Caprese Sandwich

Ingredients

  • 4 slices of Villaggio Artesano® White Bread
  • 2 Large Zucchini, thinly sliced lengthwise
  • 1 medium ball of Fresh Mozzarella, sliced
  • 1 Heirloom Tomato, thinly sliced
  • 1/2 cup (113 g) Fresh Basil
  • 1/4 cup (57 g) Balsamic Glaze
  • 1/4 cup (60 ml) Extra Virgin Olive Oil
  • Coarse Kosher Salt or Sea Salt
  • Freshly Ground Pepper

Directions

  1. Preheat grill to medium-high heat
  2. Slice zucchini lengthwise and brush with olive oil and season with salt and pepper
  3. Cook for approximately 5 minutes per side until the desired doneness and set aside
  4. Layer each slice of bread evenly with zucchini slices, then add tomato slices and mozzarella slices
  5. Top with fresh basil and drizzle with balsamic glaze
